Milk kefir and avocado soup

Here’s a silky milk kefir and avocado soup that doesn’t rely on cream for its creamy texture; pureed avocados do the job nicely. It doesn’t rely on long cooking for its full flavour. Don’t believe it? Just leave this soup in the pot for less than ten minutes.

You will need:

2 cups of milk kefir
3 avocados
3 cups chicken or vegetable broth
3 tablespoons fresh lemon or lime juice
1/3 cup fresh cilantro leaves
1 teaspoon ground cumin
1 teaspoon salt

Instructions:

  1. Combine ingredients in a blender, and process until smooth
  2. Cover and refrigerate 2 hours or until completely chilled
  3. Pour soup into serving bowls
  4. You can top each serving with Crab-and-Mango Garnish
If you like wine – rich avocados demand a full-bodied white wine. This is a great opportunity to drink California Chardonnays that can overpower less flavorful foods.
